Cold? That may be an exaggeration. Let’s just rephrase to “not 110 degrees + curry”.
When the weather finally starts to cool down, I CRAVE Indian food. Give me the spiciest, most flavorful curry you can find. I (Lindsey) also really never ever ever cook. So when I don’t have time to drive to Roti Grill or India Garden, I have to improvise.
My latest experiment has changed my life.
I bought a box of pre-made mashed vegetable curry once at Kroger. I had low low low expectations (as I do with every other pre-boxed Asian food I have ever tried), so it sat in my pantry for about 4 months before I was finally hungry enough to eat it. I wish I had known about the AWESOMENESS of this curry earlier.

I found this in the “India” section of my Kroger. I recently went back and bought 4 boxes. It is restaurant quality goodness.
Heat this up on the stove, add some chicken or pork if you’d like, and pour it over some basmati rice. Heck, you can even bake some frozen Nan bread if you can find it. Raw cook-em-yourself tortillas also serve as a good curry scooping mechanism. If you’re really gutsy, add some Sriracha sauce. I will say it is a decent level of spice out of the box, but I can’t get things hot enough for my liking, so I live by Sriracha.
Anyways, I had to share my lots of veggies, delicious curry that can be ready in 5 minutes. I’m pretty proud of my discovery.
